Italian Vegetarian Lasagna

Ingredients:

  • 12  uncooked lasagna noodles

  • 1/2  cup dry sherry or unsweetened apple juice

  • 1  medium onion, finely chopped (1/2 cup)

  • 1  package (8 oz) sliced fresh mushrooms (3 cups)

  • 2  large zucchini, shredded (about 4 cups)

  • 2  medium red or green bell peppers, chopped (1 cup)

  • 1/2  teaspoon salt

  • 2  cups chopped fresh spinach

  • 1  teaspoon dried basil leaves

  • 1/2  teaspoon dried oregano leaves

  • 1  container (15 oz) reduced-fat ricotta cheese

  • 1  cup fat-free or reduced-fat cottage cheese

  • 1/4  cup grated Parmesan cheese

  • 1  can (8 oz) tomato sauce

  • 1  cup shredded mozzarella cheese (4 oz)

Uhm... Parmesan and mozzarella cheese are NOT vegetarian. They both contain animal rennet.

There are some mozzarellas and Parmesan that are made with non-animal rennet (Frigo is one).

it is not vegan. this would be fine for a lacto vegetarian (vegetarian who uses dairy)
