Ingredients
  • 6 medium potatoes

  • 2 lbs firm tofu

  • 1/3 cup lemon juice

  • 1 tbsp honey

  • 1 Tsp salt

  • 2 tbsp olive oil

  • 4 tsp dried basil

  • 1 tsp garlic powder

  • 1 qt crushed tomatoes (or light spaghetti sauce, homemade, whatever you got)

  • 1 cup shredded mozzarella cheese

Awesome! And can be easily made completely cruelty free by substituting the mozzarella with Daiya mozzarella shreds, and agave nectar instead of honey. ;o)

This looks great - first thought too many carbs, but then saw the tofu, so it will help balance out. Cannot wait to try this!
